Peppermint Hot Chocolate

2 tablespoons natural unsweetened cocoa powder
2 tablespoons soft light brown sugar
0.5 teaspoons vanilla extract

85 grams dark or semisweet chocolate

Place a small saucepan over medium heat.

Add 420 grams (1 and 3/4 cups) of whole milk to the saucepan.

Add 115 grams (half a cup) of heavy cream to the saucepan.

Add 2 tablespoons of natural unsweetened cocoa powder to the saucepan.

Add 2 tablespoons of soft light brown sugar to the saucepan.

Add half a teaspoon of vanilla extract to the saucepan.

Add a small pinch of salt to the saucepan.

Whisk everything together until well combined.

Bring the mixture to a gentle simmer.

Once simmering, turn the heat down to low.

Add 85 grams (half a cup) of roughly chopped dark or semisweet chocolate to the saucepan.

Add half a teaspoon of peppermint extract to the saucepan.

Stir until the chocolate has completely melted and the mixture is smooth and creamy.

Pour the hot chocolate into two mugs.

Taste the hot chocolate and add extra sugar if desired.

Let the hot chocolate cool for a couple of minutes before serving.
