Coconut-Lime Chicken

4 chicken thighs
2 tbsp coconut oil or olive oil
2 minced garlic cloves
1/4 can coconut milk
juice of half a lime
1/4 teaspoon chili pepper flakes
1 tbsp soy sauce
1/4 cup chopped fresh cilantro
zest from one lime
sliced limes for serving
cauliflower rice for serving

Salt and pepper the chicken thighs.

Heat 2 tbsp of coconut oil or olive oil in a skillet.

Brown the chicken thighs on both sides (they don't have to be fully cooked).

Remove the chicken thighs from the skillet.

Add 2 minced garlic cloves to the skillet and cook until translucent.

Pour in 1/4 can of coconut milk and mix.

Add the juice of half a lime and mix through.

Add the remaining coconut milk from the can.

Stir in 1/4 teaspoon of chili pepper flakes and 1 tbsp of soy sauce.

Add 1/4 cup of chopped fresh cilantro and let the mixture reduce for 5 to 10 minutes on low heat.

Add the chicken thighs back to the skillet and turn them to coat.

Cover the skillet with a lid and cook on low to medium heat for 10 to 15 minutes until the chicken is cooked through.

Remove the lid and add more fresh chopped cilantro if desired.

Add the zest from one lime and sliced limes for serving.

Serve over cauliflower rice.
