Peel yellow flesh potatoes and slice them thin.
Dice onion and set aside with the potatoes.
Dice summer sausage and set aside.
Heat 3 to 4 tablespoons of olive oil in a non-stick pan over medium-high heat.
Lay potato slices evenly in the pan and season with salt and black pepper.
Cook potatoes for a couple of minutes before adding summer sausage and onions.
Add dried parsley for aroma and color, then mix everything and let it sit to get color.
In a bowl, whisk together 5 eggs, a healthy fistful of Parmesano cheese, a pinch of salt, black pepper, and milk.
Pour the egg mixture over the frittata filling in the pan and reduce heat to low.
Cover the pan with a lid and cook until mostly set and flippable.
Carefully flip the frittata onto a plate and slide it back into the pan to cook the other side.
Let it cool slightly before cutting and serving.
