Separate the yolks from the whites of 5 eggs, keeping only the whites in a bowl.
Add 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon red chili powder to the egg whites.
Incorporate 2-3 tablespoons of chopped green coriander and 2-3 chopped green chilies into the mixture.
Add 2-3 tablespoons of finely chopped bell pepper and 1 small finely chopped onion to the bowl.
Include 2-3 tablespoons of chopped tomatoes and any other vegetables you prefer.
Add 1/4 cup of cream or fresh cream to the egg mixture and whisk everything together well.
Heat 2 tablespoons of ghee or oil in a heavy-bottomed pan over low flame.
Pour the egg mixture into the pan, covering it with a lid, and cook on low heat for 5-7 minutes, placing a heavy tava underneath to prevent burning.
Once semi-cooked, arrange the reserved egg yolks on top of the omelette and add cheese if desired.
Sprinkle oregano, red chili powder, and black pepper on top, and optionally add a bit of salt.
Cover the pan again and cook for an additional 5-6 minutes on low heat until the yolks are cooked and the cheese melts.
Garnish with chopped green coriander before serving.
