Mix dry yeast with warm milk and a little sugar, let stand for 5 to 8 minutes.
Add 1 large egg and melted butter to the yeast mixture and whisk well.
In a large mixing bowl, combine bread flour, sugar, and salt, and whisk everything well.
Add the wet ingredients to the dry ingredients and knead the dough for 5 to 8 minutes on medium speed or by hand.
Grease a large bowl with oil, place the dough inside, cover with plastic wrap, and let it rise in a warm place for about 1.5 hours.
After rising, knead the dough for about 1 minute until smooth.
Shape the dough into a log about 16 inches long and cut it into 8 equal pieces.
Flour the work surface and flatten each piece with a rolling pin to about 1 foot long and 5 inches wide.
Add guava paste above the center of each piece, fold, and seal the edges.
For the adipe filling, place solid adipe above the center, fold, and seal the edges.
Place the shaped roscones on a cookie sheet lined with parchment paper, cover with egg wash, and sprinkle with granulated sugar.
Let them rise in a warm place for about 20 minutes.
Bake at 350°F for 20 to 25 minutes or until golden brown.
Let cool on a cooling rack.
