1 kilo of potatoes, boiled
50 grams of pork rinds
1/2 red onion, diced
4 cloves of garlic, chopped
1 tablespoon of vegetable lard

1 teaspoon of ground cayenne pepper
1 teaspoon of ground paprika
1 teaspoon of vegeta (Knorr vegetable mix)
1 teaspoon of ground cumin
Salt to taste

Peel and dice 1 kilo of potatoes, then boil them in a pot with fresh water and salt for about half an hour until soft. Remove from water and set aside.

Heat a pan over medium heat, add 1 tablespoon of vegetable lard, and cook the diced onion until translucent.

Add 50 grams of pork rinds, stir for a couple of minutes, then add 4 cloves of chopped garlic. Cook for another two minutes and transfer to a separate plate.

In the same pan, cook 4 sausages on all sides, adding a splash of olive oil if the pan becomes too dry. After cooking for a few minutes, add a splash of water, cover the pan, and lower the heat to medium-low to finish cooking.

In a new pan, heat 1 tablespoon of olive oil over medium-high heat, add the pork rinds and fry for a couple of minutes. Then, add 500 grams of sauerkraut and cook for 5 minutes.

In another frying pan, heat 2 tablespoons of extra virgin olive oil over medium-high heat. Once hot, add the cooked potatoes and sauté for 3-4 minutes, stirring occasionally.

Add the onion and pork rind mixture to the sautéed potatoes, season with 1 teaspoon each of ground cayenne pepper, ground paprika, vegeta, and ground cumin. Adjust salt to taste and mix well for two minutes.

Serve a generous portion of the sauerkraut and sautéed potatoes on a clean plate, place a sausage on top, add some cooking juices from the sausages, and finish with a splash of mustard.
