Wash the jackfruit 3-4 times with water and drain.
Place jackfruit in a pan with water and barbecue sauce, and cook until very tender.
In a separate bowl, mix together nutritional yeast, smoked paprika, onion powder, garlic powder, and sea salt until well blended.
In another small bowl, mix soy sauce and liquid smoke.
Shred the cooked jackfruit, discarding the hard parts and seeds, and optionally leave some chunks.
Transfer the shredded jackfruit to a mixing bowl and add half of the seasoning mix, then mix well.
Add the remaining seasoning mix and the liquid mixture to the jackfruit, mixing until well coated.
Spray a glass baking pan with cooking spray and transfer the jackfruit mixture into it, maintaining some thickness.
Place the pan in the oven uncovered.
Prepare the barbecue sauce by mixing barbecue sauce with apple cider vinegar, grape jelly, and Jack Daniels (no measurements provided).
Once the ribs are done in the oven, cut them in half.
Heat a grill pan or frying pan with oil until hot.
Grill or fry the ribs until they have a nice crispy coating, adding barbecue sauce to one side while cooking.
Flip the ribs over, coat the other side with barbecue sauce, and return them to the baking pan.
Place the ribs back in the oven uncovered to firm up.
Once done, cut the ribs into slices using a steak knife or serrated knife for clean cuts.
Plate the ribs and serve.
