Heat a wide pan over medium heat until it starts to smoke.
Add olive oil to the pan and move it around.
Add prepared salted cod to the pan and let it cook on low heat for about 3 minutes, stirring occasionally.
Add chopped onion to the pan and sweat it down for about 1-2 minutes.
Add black pepper to the onion and stir.
Add chopped bell pepper (red and green) to the pan and mix well.
Add thinly sliced scotch bonnet pepper (without seeds) to the pan.
Add a few sprigs of fresh thyme to the mixture.
Add chopped scallion to the pan and mix everything together.
Keep the heat on low to build flavor in the mixture.
Pour in coconut milk and bring it to a boil.
Let the coconut milk simmer until it reduces by about half.
Taste the mixture for salt and adjust with black pepper if desired.
