1

Dice 1 large Spanish onion.

2

Dice 1 small zucchini into quarters.

3

Peel and dice 1 large carrot into chunky quarters.

4

Slice 2 stalks of celery.

5

Add 3 tablespoons of extra virgin olive oil to the Instant Pot.

6

Set the Instant Pot to the sauté function on high.

7

Wait until the oil is hot, then add the diced vegetables (onion, zucchini, carrot, celery) to the pot.

8

Sauté the vegetables for about 5 minutes, stirring occasionally until softened.

9

Pour in 6 cups of vegetable broth (or 6 cups of water mixed with 6 teaspoons vegetable better than bouillon).

10

Add 1 28-ounce can of crushed tomatoes and 1 14.5-ounce can of diced tomatoes to the pot.

11

Add 1 15.5-ounce can of drained and rinsed cannellini beans and 1 15.5-ounce can of drained and rinsed red kidney beans.

12

Stir everything together in the pot.

13

Add 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1/2 teaspoon of dried thyme, 1 teaspoon of black pepper, and 2 teaspoons of seasoned salt. Stir to combine.

14

Add 1 cup of pipette pasta to the mixture and stir.

15

Add 9 to 10 ounces of frozen cut green beans on top of the mixture.

16

Add about 5 ounces of baby spinach on top without stirring it in yet.

17

Seal the Instant Pot lid and ensure it is in the sealing position.

18

Cancel the sauté function and select the manual or pressure cook button for 5 minutes on high pressure.

19

Wait for the Instant Pot to come to pressure (this may take 10 to 20 minutes due to the liquid volume).

20

After 5 minutes, perform a quick release of the pressure.

21

Once the pin drops, carefully remove the lid and stir the soup to mix in the spinach.

22

Transfer the soup to a bowl and optionally sprinkle with parmesan cheese before serving.
