Season with salt, black pepper, cumin, coriander, cardamom, and bay leaves; stir to combine.

Add chicken pieces and brown on all sides, about 5-7 minutes.

Pour in water to cover the chicken; bring to a boil.

Reduce heat to low, cover, and simmer until chicken is cooked through, about 30-40 minutes.

Add chopped carrots and potatoes; cook until tender, about 15-20 minutes.

Stir in lemon juice before serving.
