Roll out the ready-made pastry and place it in a deep cake tin.

Add the onions directly into the pastry-lined tin. You can choose to cook the onions first for a stronger flavor or leave them raw.

Drizzle a little olive oil over the onions and sprinkle a touch of dairy-free cheese on top.

In a blender, add a couple of packs of silken tofu (firm or soft or a mixture of both) and blend until smooth.

Grate about 100g of dairy-free cheese (like Sheese, Redwood cheese, or Tofutti) and add it to the blender.

Add a spoonful of organic mustard to the blender mixture.

If desired, add nutritional yeast for a cheesy flavor instead of dairy-free cheese.

Pour in a little drop of soy milk and olive oil (optional) into the blender and blend again until combined.

Pour the tofu mixture over the onions in the pastry-lined tin, filling it as much as possible. Use any leftover mixture if needed.

Preheat the oven to 180°C and bake the quiche for about 20 minutes, checking it periodically.
