Preheat the oven to 375°F (190°C).
Add 1 tablespoon of butter to a 10-inch cast iron skillet and place it in the oven to melt.
In a mixing bowl, combine 3/4 cup coconut flour, 1/2 cup almond flour, 1/4 cup swerve sweetener, 1 tablespoon baking powder, 1/2 teaspoon xanthan gum, and 1/2 teaspoon salt. Whisk together to break up any clumps.
In another bowl, add 6 large eggs and 1/2 cup melted butter (not hot) and stir together.
Combine the wet ingredients with the dry ingredients and mix well.
Add about 1/4 cup of water to thin out the batter, adjusting until you reach a thick batter consistency.
Stir in chopped jalapeno and cooked crumbled bacon.
Remove the skillet from the oven, brush the melted butter around the skillet, and pour the batter into the hot skillet, spreading it evenly.
Bake for 20 to 30 minutes until golden brown and firm to the touch.
