Clean the chicken by removing the backbone and breaking the breast bone to lay it flat.
Wash the chicken with vinegar and lemon.
Rub the chicken with green seasoning, Jamaican jerk seasoning, Maggi all-purpose seasoning, smoked paprika, and onion powder.
Allow the chicken to marinate for at least 1 hour.
Preheat the oven to 400°F (204°C).
Place the marinated chicken in the oven.
Prepare the sauce by mixing gravy, onion, garlic, barbecue sauce, and brown sugar.
Add the sauce to the chicken and return it to the oven for an additional 10-15 minutes.
In a pot, add red kidney beans and 4 cups of water; cover and cook until the beans are soft and tender.
After an hour, add 2 cups of coconut milk, scallion, thyme, and scotch bell pepper to the beans.
Cover and let it cook for about 5 minutes.
Add the washed rice and 1 tablespoon of butter (optional); cover and steam for 20-25 minutes on medium heat, reducing to low heat after 15 minutes.
Prepare the callaloo by steaming onions, garlic, tomato, bell pepper, and scallion for 5-10 minutes.
