Chop 1 medium onion.

Heat 4 cups Greek olive oil in a large pot over high heat.

Pour in 1.5 liters of water, ensuring it's covered plus a little more.

Add 3 fresh bay leaves and 1 bunch of fresh thyme to the pot.

Mix everything one last time.

Once boiling, put the lid on, turn down the heat, and leave to simmer for 40 minutes.

After 40 minutes, taste and add 0.5 tablespoon of salt, adjusting with more salt and pepper if needed.

Serve the soup in a bowl, drizzle with more Greek olive oil, add a little red wine vinegar, and sprinkle with chili flakes.
