Repeat layering until all potatoes and onions are used, finishing with potatoes on top.

Add the chicken stock to the pan.

Place thyme and rosemary on top of the layers.

Add the pork chops on top of the herbs.

Bake in the oven at 180 degrees Celsius for 2.5 hours.

Check after 1.5 hours; turn the pork chops over to brown both sides.

Finish the remaining potatoes under the grill to crisp them up.
