4 slices bacon
1 lb mild sausage
4 cups French bread, cut into 1/2 in cubes
1 cup chopped onions
1 cup chopped bell pepper
1 cup toasted chopped walnuts
1/2 cup mushrooms
1/2 cup green onions
1/2 cup apples, chopped
1/4 lb cheese (white cheddar, Gruyere, Gouda, or combo)
4 cloves garlic, minced
1/3-1 cup heavy cream
1 tablespoon fresh thyme
1 teaspoon rosemary
1/2 teaspoon ground sage
1 pinch nutmeg

Brown the sausage in a skillet over medium-high heat.

Cut out the top of the pumpkin using a sharp knife inserted at a 45-degree angle and discard the top.
