  • 2 lbs russet potatoes, thinly sliced
  • 2 large onions, thinly sliced
  • 3 tbsp butter
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 tbsp fresh thyme, chopped

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 20-25 minutes.
  3. 3Add the minced garlic to the onions and cook for an additional 1-2 minutes until fragrant. Remove from heat.
  4. 4In a large mixing bowl, combine the heavy cream, salt, black pepper, nutmeg, and fresh thyme. Mix well.
  5. 5In a greased 9x13 inch baking dish, layer half of the sliced potatoes evenly on the bottom.
  6. 6Spread half of the caramelized onion mixture over the potatoes, followed by half of the cheddar and Parmesan cheese.
  7. 7Repeat the layers with the remaining potatoes, onions, and cheeses.
  8. 8Pour the cream mixture evenly over the top of the layered potatoes.
  9. 9Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
  10. 10Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender.
  11. 11Let it cool for a few minutes before serving.
