Peel and wash the potatoes.
Cut the potatoes into smaller pieces.
Soak the potatoes in salted water for about 20 minutes.
Drain the water and pat dry the potatoes with a kitchen towel.
Add dried parsley, dried basil, green seasoning, and cayenne pepper to the potatoes.
Drizzle olive oil over the seasoned potatoes and massage the seasoning into them.
Spread the potatoes evenly on a lightly greased baking sheet.
Place the baking sheet in a preheated oven at 350 degrees for about an hour.
Allow the roasted potatoes to cool completely before serving.
