6-8 Chicken drumsticks, skin on or off per preference
1 ½ cups uncooked basmati rice (washed & strained)
1 tsp mixed herbs/Italian seasoning
2 tsp smoked paprika
1/2 tsp ground chili powder
1 tsp onion powder
1 tsp garlic powder
2 tbsp Olive oil
1 cup onion chopped
1 tbsp butter
2 ½ cups low sodium chicken stock
1 ½ tsp salt
1 tsp black pepper
1 tbsp chopped garlic
1/2 cup chopped cilantro, chopped parsley, or green onions

To a small mixing bowl, add smoked paprika, red chili powder, mixed herbs, garlic powder, onion powder, salt, and black pepper, and mix to combine. Reserve one teaspoon of the seasoning mix for later use.

Add the rest of the seasoning mix to the chicken. Mix until the chicken is well coated. Cover & let rest for 2 hours to overnight in the refrigerator.

Add 2 tbsp oil to a hot pan. On medium-high heat, add the chicken, and sear for 3-5 minutes on each side until golden brown. Remove the chicken to a plate and set it aside.

To the same pan, using the same oil, add chopped onions to the pan. Sauté the chopped onions in the hot oil until soft and translucent.

Add chopped garlic and sauté for 1-2 minutes. Add the butter, and stir until melted.

Stir in the rinsed rice and toast for about a minute or two making sure it doesn’t stick to the bottom of the pan.

Pour the chicken stock over the rice, add the reserved seasoning, and stir to combine. Taste and adjust seasoning to taste at this point.

Arrange the chicken over the rice. Cover and cook on low-medium heat for about 25 to 30 minutes until rice is tender and fluffy and the liquid is absorbed.

Garnish with chopped cilantro, parsley, or green onions.
