1

Make the creamy peanut sauce by combining natural peanut butter, plain almond milk, minced garlic, Bragg's Aminos or soy sauce, rice vinegar, and Sriracha sauce in a bowl and whisk together.

2

If the sauce doesn't blend well, microwave it for 30 seconds to help it cream up.

3

Set the peanut sauce aside in a bowl.

4

Prepare the collard greens by placing the leaf with the coarse side facing up.

5

Trim the thick stem of the collard green leaf to make it easier to roll.

6

Blanch the collard green leaf by dipping it in boiling water for 20 to 30 seconds to make it pliable.

7

Remove the leaf from the boiling water and place it on a flat surface.

8

Use scissors to trim away the bottom of the stem where it meets the leaf.

9

Add cooked bulgur to the bottom of the collard green leaf near the stem.

10

Top with sliced cucumbers, sliced red bell peppers, bean sprouts, and grated carrots.

11

Drizzle a couple of teaspoons of the peanut sauce over the filling.

12

Fold the sides of the leaf in, then fold up the bottom and roll tightly to form the wrap.

13

Serve the collard green wraps with the remaining peanut sauce.
