Gather collard greens, cauliflower, long radicchio, micro greens, carrot, lime, garlic, ginger, radishes, Asian pear, tofu, peanut butter, tahini, tamari, pre-cooked beets, coconut milk, and maple syrup.

For the sauce, combine 1/2 cup organic unsweetened peanut butter, 1/4 cup tahini, 2 tablespoons tamari, and juice of one lime in a bowl.
