Traditionally used to marinate meats and fish, it embodies the bold flavors of Caribbean cuisine. Today, this seasoning is embraced globally, often found in various dishes that seek to capture the essence of the tropics.

allspice

Strip the leaves from the flat leaf thyme.
Chop the Scotch bonnet peppers and add them to the mix.
Chop the onions and add them as well.
Add Worcestershire sauce to the mixture.
Add clove, allspice, black pepper, salt, and sugar to the blender.
Add white wine vinegar to the blender.
Blend the ingredients until well mixed, stirring occasionally to achieve a consistent texture.
Add the dry ingredients to the blender, starting with salt.
Add clove and all other dry ingredients, mixing thoroughly.
Add olive oil and cinnamon as secret ingredients to enhance flavor.
Stir all ingredients well to combine them.
Sterilize a bottle using boiling water to store the seasoning.
Pour the seasoning into the sterilized bottle and store it in the fridge.
Use the seasoning on chicken by rubbing it in, about four teaspoons.
Slice the chicken and sprinkle with black pepper and garlic.
Drizzle olive oil over the chicken and rub it in.
Use a callow stock cube to season both sides of the chicken.
