Chimichurri Steak Skewers

1 lb flank steak, cut into 1-inch cubes
1/4 cup olive oil
2 tbsp red wine vinegar
1/2 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
3 cloves garlic, minced
1 tsp red pepper flakes
1/2 tsp salt
1/2 tsp black pepper
1 tbsp lemon juice
8 skewers (soaked in water if wooden)

In a bowl, combine olive oil, red wine vinegar, parsley, cilantro, garlic, red pepper flakes, salt, black pepper, and lemon juice to make the chimichurri sauce.

Reserve half of the chimichurri sauce for serving later.

Add the steak cubes to the remaining chimichurri sauce and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Preheat the grill to medium-high heat.

Thread the marinated steak cubes onto the skewers, leaving a little space between each piece.

Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the steak is cooked to your desired doneness.

Remove the skewers from the grill and let them rest for a few minutes.

Serve the skewers with the reserved chimichurri sauce drizzled on top.
