Soak red kidney beans in water.
Add spelt flour to the ingredient list.
Prepare coconut, pumpkin, sweet potato, yam, cassava, spring onion, thyme, garlic, green pepper, okra, and carrots.
In a pot, add pimento berries, fresh thyme, and two cloves of garlic.
Add soaked red kidney beans to the pot and stir.
Allow the mixture to boil, checking every 10-15 minutes to ensure the beans are cooking properly.
Add a cup of cold water to the beans if needed.
Test the beans for doneness by pressing them with a spoon to see if they are soft.
Add pumpkin and carrots to the pot, along with more water to ensure there is enough liquid.
Prepare the sweet potato and cassava by dicing them small and add them to the pot.
Add more water to the pot for cooking the additional ingredients.
Prepare dumplings by kneading the spelt flour and set aside.
Once the pot is boiling, add coconut milk and seasonings, but do not add salt yet.
Add a pinch of salt to the soup, adjusting to taste later.
Add the dumplings to the pot, making them small in size.
Stir the soup to prevent sticking to the bottom of the pot.
Cover the pot and cook on low heat.
After 10 minutes, add okra to the pot and stir.
Cook for an additional 3 minutes, then turn off the heat to prevent the okra from becoming too soft.
Taste the soup, ensuring to use a clean spoon for tasting.
Serve the soup once it is done.
