mozzarella cheese
🥗Healthier: part-skim mozzarella

Part-skim mozzarella has fewer calories, while cottage cheese offers a creamy texture at a lower cost.
Slice off any gnarly bits from the top of the tomatoes to create a flat base.
Place chopsticks on either side of the tomato to guide your slicing.
Slice the tomatoes every eighth of an inch, being careful not to cut all the way through.
Slice the bocconcini cheese into thin slices.
Insert the cheese slices between the tomato slices.
Take larger basil leaves and slip them in between the cheese and tomato slices.
Chop smaller basil leaves and sprinkle them over the top of the assembled tomatoes and cheese.
Sprinkle a pinch of salt over the assembled dish.
Drizzle Tuscan herb olive oil over the tomatoes, ensuring it gets into the cracks.
Drizzle traditional dark balsamic over the top before serving.
