Cover the sushi roll with salmon, ensuring the salmon is on the outside.
Cut the roll in half for easier handling.
Prepare tempura batter by mixing 250 grams of tempura flour with 350 ml of icy cold water, optionally adding a little salt and egg yolk.
Dip the sushi roll in the tempura batter, ensuring it is well-coated.
Heat vegetable oil to 174 degrees Celsius in a deep fryer.
Carefully place the battered sushi roll into the hot oil and fry until golden brown and crunchy.
Remove the roll from the oil and drain on paper towels to reduce oiliness.
For plating, add the previously made fish mixture on top of the sushi roll.
Garnish with deep-fried garlic slices for extra texture and flavor.
Finish with sweet chili sauce and black tobiko for color.
