While variations exist, the core ingredients remain a comforting staple in Irish households and are enjoyed by many around the world, especially during colder months.

Spray the bottom of a large saucepan with oil.
Add sliced leeks to the saucepan.
Add sliced carrots to the saucepan.
Add sliced celery to the saucepan.
Stir the vegetables and let them sweat for a couple of minutes until they start to soften.
Add the soup mix (pearl barley, yellow split peas, green split peas, red split lentils) to the saucepan.
Pour in 2 pounds (1 liter) of vegetable stock and stir.
Simmer the mixture for an extra 45 minutes to soften the vegetables.
Add seasoning, being cautious with salt due to the vegetable stock, and add more black pepper.
Add chopped parsley to the soup.
Cover the saucepan and let it simmer for 2.5 to 3 hours until the soup mix and split peas are soft.
Taste the soup for seasoning and adjust if necessary.
Serve the soup with white bread, crusty bread, or whole wheat bread.
