Smoked Coca Cola Glazed Ham

Start by introducing the recipe for Coca-Cola ham.
Prepare a deep pan for cooking.
Place the unsmoked gammon or ham joint into the pan with the fat side up.
Add a whole carrot, half an onion, two bay leaves, and a large stick of celery to the pan.
Grind black pepper over the ham and optionally rub it in or add peppercorns.
Add a cinnamon stick for flavor.
Pour the entire 2-liter bottle of Coca-Cola into the pan with the ham.
If the Coca-Cola does not completely cover the ham, add water until the ham is fully submerged.
Place the pan on the hob and bring to a simmer over medium heat.
Once simmering, leave the spoon resting across the pan to prevent it from boiling over.
Cook the ham for about 2.5 hours, ensuring it remains submerged in the liquid by adding more water if necessary.
After 2.5 hours, prepare the glaze by mixing 150 ml of maple syrup, white wine vinegar, two tablespoons of whole grain mustard, and smoked paprika in a bowl.
Taste the glaze and adjust the flavors as desired by adding more vinegar or syrup if needed.
Using a colander, carefully pour the hot liquid from the pan into the sink to separate the ham from the cooking liquid.
