Prepare the breading mixture by combining 4 cups of all-purpose flour, 3.5 cups of whole milk, 4 eggs, and 4 tablespoons of chicken seasoning in a large bowl.
Add 1/2 tablespoon of salt to the mixture and mix until there are no lumps, ensuring the consistency is not too thick or too thin.
Heat vegetable oil in a large pot over medium-high heat until hot, then reduce to medium heat.
Coat each piece of chicken in the breading mixture, allowing excess to drip off before placing it in the hot oil.
Fry the chicken for about 40 minutes, flipping halfway through after 20 minutes, ensuring it is cooked through and crispy on the outside.
While the chicken cooks, prepare the red beans by sautéing chopped red onion in a separate pan.
Cook the beans according to package instructions, or heat them in the microwave if pre-cooked.
Fry plantains in the same oil after the chicken is done, until golden brown.
Prepare seasoned frozen potatoes in the same oil, or cook them separately if preferred.
