Chop onion into a small dice, celery into larger pieces, and carrots into a size between the onion and celery.
Mince garlic and cut potato into pieces, using a knife tip to prevent sticking.
De-seed tomatoes by cutting them into quarters and removing seeds, then dice them.
Heat a large stock pot over medium-high heat and add oil until it smokes on contact.
Add chopped onions, celery, and garlic to the pot, sautéing for a few minutes until softened.
Season with a pinch of salt and fresh ground black pepper, mixing to distribute evenly.
Add minced garlic and sauté for another minute or two until fragrant.
Incorporate diced tomatoes into the mixture and mix well.
Add better than bouillon vegetable bouillon paste and tomato paste, mixing until well incorporated.
Pour in vegetable stock and bring to a boil, mixing continuously.
Sprinkle in dried Italian seasoning and add 2-3 bay leaves, mixing again.
Add chopped potato and drained, rinsed canned beans, mixing to combine.
Add frozen cut green beans and cover the pot, simmering for 15-20 minutes.
After simmering, add baby spinach and mix until wilted.
Take some soup base from the pot and add medium-sized shell pasta, cooking it according to package directions.
Once pasta is cooked, remove from heat and add fresh chopped parsley, mixing well.
Ladle soup into bowls, ensuring a good ratio of broth to solids.
Top with freshly grated parmesan cheese before serving.
