In a large bowl, crack 12 eggs and add 2.5 cups of milk, 1 teaspoon salt, 0.25 teaspoon black pepper, 0.25 teaspoon garlic powder, and 0.25 teaspoon onion powder. Whisk until well combined and fluffy.
Coat a 9x13 baking dish with butter, covering the sides and corners.
Cut the baked bacon into bite-sized pieces and place half in the bottom of the baking dish.
Sprinkle 1 cup of shredded cheddar cheese over the bacon.
Layer the crunchy English muffin cubes on top of the cheese in a single layer.
Pour the egg mixture over the English muffin cubes and press down with a fork to ensure they soak up the mixture.
Let the casserole sit for 15 minutes, or refrigerate for 1 hour to overnight before baking.
Sprinkle the remaining bacon on top and add another cup of spicy Mexican cheese blend.
Top with chopped green onion for color and freshness.
Lower the oven temperature to 350 degrees and bake the casserole for about 60 minutes until the eggs are set.
Check doneness by inserting a knife into the casserole; it should come out clean without wet egg.
Let the casserole sit for 10 to 15 minutes before cutting into squares.
