Peel and cut yuca into cubes.
Boil yuca in water until tender, about 15-20 minutes, with chicken, onion, cubanelle pepper, red bell pepper, and garlic added for flavor.
Once cooked, remove chicken and let it cool.
Use a food processor to shred the yuca, or grate it if you don't have one.
Extract excess water from the shredded yuca using a clean kitchen towel.
Season the yuca with salt and achiote, then cook it in a skillet over medium heat for about 15 minutes, stirring continuously to form a dough-like consistency.
Once the yuca has formed a dough, let it cool slightly and then knead it until smooth.
Roll out the dough to about 2-3 mm thick and cut into discs using a cookie cutter or a glass.
Prepare the filling by shredding the cooked chicken and chopping the cooked vegetables.
Combine the chicken and vegetables in a bowl, mixing well.
