Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 bunch kale, stems removed and leaves chopped
  • 1 head of garlic
  • 3 tbsp olive oil
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tbsp lemon juice

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast in the oven for 30-35 minutes until soft.
  3. 3While the garlic is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  4. 4In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped kale, red pepper flakes, salt, and black pepper. Sauté for about 5-7 minutes until the kale is wilted and tender.
  5. 5Once the garlic is roasted, squeeze the cloves out of their skins into the skillet with the kale. Mash the garlic with a fork and mix well.
  6. 6Add the cooked pasta to the skillet with the kale and garlic mixture. Toss to combine, adding reserved pasta water a little at a time until the desired consistency is reached.
  7. 7Stir in the lemon juice and Parmesan cheese (if using). Mix well to combine all ingredients.
  8. 8Serve warm, garnished with additional Parmesan cheese and a sprinkle of red pepper flakes if desired.
