Spanish Chicken Fricassee

2 pounds chicken breast

2 tablespoons salted butter
1 large onion, chopped
1 carrot, peeled and chopped
1 celery stalk, chopped
8 ounces mushrooms, sliced

Season the chicken breast with salt and pepper.

Cut the chicken breasts in half to about a quarter inch thick for even cooking.

Heat 2 tablespoons of olive oil in a high-sided skillet.

Brown the chicken breasts for about 5 minutes on each side until they are cooked through.

Remove the chicken from the skillet and set aside on a plate.

In the same skillet, melt 2 tablespoons of salted butter.

Add chopped onion, carrot, celery, and sliced mushrooms to the skillet and cook until softened.
