Start by cleaning 1 kg of mutton and set aside.

Chop 2 onions and 2 tomatoes, and soak 500 g of basmati rice in water for 1 hour.

Prepare the spice mix by grinding cumin, black pepper, coriander, cinnamon, cardamom, and cloves together.

In a pot, heat oil and add the chopped onions, cooking until browned for about 5 minutes.

Add 2 tbsp of garlic, 1 tbsp of ginger, and green chilies to the browned onions.

Stir in the chopped tomatoes and cook until softened.

Add 1 tsp of turmeric and the prepared spice mix, cooking until fragrant.

Add 2 tsp of salt and mix well before adding the mutton pieces.

Pour in enough water to cover the mutton, approximately 3 glasses, and cook until the mutton is tender, about 30 minutes.

Once the mutton is tender, remove the pieces and set aside.

Layer the soaked rice over the mutton mixture in the pot, ensuring even distribution.

Drizzle 2 tbsp of keora essence over the rice and cover tightly.

Cook on low heat for 15 minutes to allow the flavors to meld.

In a separate pan, heat oil and fry green chilies, almonds, cashews, and raisins until golden brown.
