Wipe the surface of the shiitake mushrooms with a kitchen towel and remove the stems.

Finely chop the shiitake mushroom stems and green onion, then mix in a bowl with 200g ground beef, 1 tablespoon soy sauce, 0.5 tablespoon black pepper, 0.5 tablespoon minced garlic, 2 tablespoons mirin, chopped green onion, chopped shiitake mushrooms, and 1 tablespoon flour to make a tasty filling.
