In a small bowl, combine the onion powder, garlic powder, Cajun seasoning, dry parsley, and black pepper. Rub this seasoning mix evenly on both sides of the pork chops.

Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 3–4 minutes per side, until nicely browned. Remove from skillet and set aside.

In the same skillet, reduce the heat to medium. Add the butter. Once melted, stir in the crushed garlic and fresh thyme sprigs. Sauté for 30 seconds to 1 minute until fragrant.

Stir in the honey, soy sauce, and red wine vinegar. Scrape up any browned bits from the bottom of the pan and simmer the sauce for 2–3 minutes until slightly thickened.

Return the pork chops to the skillet. Spoon the sauce over the chops and let them simmer in the sauce for another 2–4 minutes until fully cooked and glazed.
