1/2 cup all purpose flour (60 grams)
1 tsp baking powder (5 grams)
2 tbsp granulated sugar (25 grams)
1 tsp cinnamon powder (2.50 grams)
1/4 tsp sea salt (1.50 grams)
1 large egg
1/3 cup low-fat milk (90 ml)
1/2 lemon (zest)
1 granny smith apple
1/4 cup granulated sugar (for dusting) (50 grams)

Heat a large fry pan with a medium heat and add in the sunflower oil.

While the oil is heating, add the flour into a large bowl, along with the baking powder, granulated sugar, cinnamon powder and sea salt, mix together, then make a well in the middle, crack in the egg and whisk it, then add in the milk and whisk everything together until you get a smooth batter.

Peel the apple and core it, then cut into small pieces, add the chopped apple into the batter, along with the zest of half a lemon, mix together, if your batter is too thin, add in more flour.

Once the oil in the pan is hot, about 10 minutes, start adding in spoonfuls of the batter, make sure all the fritters are in a single layer and evenly spaced, cook in batches, fry for 2 minutes per side or until golden fried, then transfer into a dish with paper towels.

Once all the fritters are fried up, add 1/4 cup (50 grams) granulated sugar into a shallow bowl and lightly coat each fritter in it, serve warm or at room temperature, enjoy!
