Preheat the oven to 400°F (200°C).

Slice the berenjena in half lengthwise and scoop out some flesh to create boats.

Brush the cut sides with olive oil and sprinkle with salt.

Place the berenjena halves cut side down on a baking sheet and roast for 20-25 minutes until tender.

Meanwhile, heat olive oil in a skillet over medium heat.

Add chopped onion and garlic, sauté until translucent, about 5 minutes.

Stir in diced tomato and bell pepper, cooking until softened, about 5-7 minutes.

Add cumin, paprika, salt, and black pepper, mixing well for 2 minutes.

Remove from heat and stir in chopped parsley and lemon juice.

Scoop the filling into the roasted berenjena halves.

Top with crumbled feta cheese and bread crumbs.

Return to the oven and bake for an additional 10 minutes until golden.

Serve warm, garnished with extra parsley.
