Feta provides a similar tangy flavor, while mozzarella is more affordable.

Cut slices of pecorino cheese.

Place a slice of cheese onto a sheet of phyllo dough.

Fold the phyllo dough around the cheese in an envelope manner, making one fold, then folding the sides, and finally the last fold.

Heat 50 milliliters of Greek olive oil in a skillet over medium to high heat.

Place the folded cheese with the phyllo dough down into the skillet.

Cook for about 2-3 minutes on one side until light crisp, then flip to the other side and cook for another 2-3 minutes.

Remove from the skillet when the cheese is melting and the phyllo is crispy.

Serve hot with a squeeze of lemon on top and enjoy.
