2 medium russet potatoes, diced into 1/2-inch pieces

3/4 tsp paprika
2 cups sauerkraut
1-2 tbsp honey
2 tbsp whole-grain mustard

Preheat the oven to 400°F. Heat a 12-inch cast iron or oven-safe skillet over medium. Once warm, add the kielbasa and cook until it is lightly brown, 3 minutes. Flip and repeat until the other side is lightly brown, 3 minutes. Remove the kielbasa from the skillet and set aside.

Add the butter to the skillet. Once melted, remove from the heat and add the prepared onion, potatoes, salt, black pepper, garlic powder, and paprika. Toss to combine and place in the preheated 400°F oven. Roast until the potatoes are tender and beginning to brown, 18-22 minutes. Remove from the oven.

Add the sauerkraut, honey, and mustard to the skillet. Stir to combine and place the kielbasa on top. Return to the oven and cook until everything is warmed through, 10-14 minutes.
