Chicken and Shrimp Jambalaya

1/2 (15 g) knob ginger, peeled and lightly pounded
1 (4 cups) L water
2 (450 g each) packs PUREFOODS READY-TO-EAT CHICKEN AFRITADA
1 (150 g) pc red bell pepper, cubed
150 grams Baguio beans, trimmed and cut diagonally into 3
6 cups cooked rice

In a pot, boil shrimps and ginger in water until shrimps turn orange in color. Drain just before using and reserve 2 cups stock.

In a large wok or pan, heat frozen Afritada with reserved stock for 8 to 10 minutes, stirring occasionally. Add bell pepper and Baguio beans. Cook until vegetables are almost tender. Add cooked rice and mix well. Add half of shrimps.

Transfer to platter and arrange remaining shrimps.
