Cut 600 grams of potatoes into quarters and wash them, leaving the skin on.
Place the potatoes in the roasting pan as a bed for the chicken.
Cut 2 carrots with the skin on into rustic pieces and reserve smaller pieces for stuffing the chicken.
Chop a bell pepper and reserve some for stuffing the chicken.
Cut a small onion into quarters or strips, reserving some for stuffing the chicken.
Chop aromatic herbs, using half for the chicken and reserving the other half.
Chop celery, placing the leaves inside the chicken and the stalks under it in the roasting pan.
Cut 2 lemons, placing one inside the chicken and the other in the roasting pan.
Season the vegetables with salt, pepper, and olive oil.
Brine the chicken for about 5 hours with salt to enhance flavor.
Soften 80 grams of butter and mix with 100 grams of blended chipotle and guajillo chilies, 2 cloves of garlic, and 1/2 cup of oil, adding salt, pepper, and cumin to taste.
Lift the chicken skin and spread the butter mixture under it, then stuff the chicken with the reserved vegetables and herbs.
Tie the chicken legs together for aesthetic purposes before roasting.
Preheat the oven to 200°C (400°F) and roast the chicken for approximately 1 hour and 40 minutes, basting occasionally with chicken broth or white wine.
After 30 minutes, add a bit of chicken broth to the pan to keep it moist.
Once cooked, baste the chicken with the pan juices before serving.
