1 red onion, chopped
1 tbsp olive oil
3 garlic cloves, chopped
1 red/ green pepper chopped, deseeded
1 10oz. can diced tomatoes and green chilies
1 can sweet corn kernels, drained and rinsed
1 can black beans drained and rinsed
1 can Red kidney beans drained and rinsed
1/2 tsp cumin powder
1/2 tsp paprika powder
1 tsp chili powder
Salt to taste
1/4 tsp black pepper
1 cup uncooked quinoa
1 cup water or vegetable broth
2 tbsp cilantro, chopped
2 tbsp green onions, chopped
1 Avocado, halved, peeled, pitted, and diced
Juice of 1 lime
1/4 cup Sour cream

Wash and rinse quinoa through a sieve and set aside.

Turn on instant pot, press the sauté button. Once it displays hot, add oil to it and then add the chopped onion, garlic and pepper. Sauté until the onion is softened.

Add diced tomatoes, black beans, kidney beans and corn kernels. Mix well.

Add cumin powder, paprika, chili powder, salt and black pepper and mix everything well.

Add the quinoa and toss until well combined. Then add the water and mix.

Cancel sauté and close the pot with its lid. Press the pressure cook button and cook on high pressure for 2 minutes. Make sure the valve is in the sealing position.

Natural pressure release after 10 minutes. Open the lid, fluff the quinoa with a fork. Season with additional salt as needed.

Sprinkle with cilantro, green onions, lime juice and avocado.
