Mix 3.5 kg of flour, 50 g of sugar, and 10 g of salt in a large bowl.
Make a well in the flour mixture and add 25 g of yeast.
Prepare 250 ml of water and mix some with the yeast, sugar, and a bit of flour, then let it rest for about 6 minutes until it bubbles.
Once the yeast is bubbly, add 50 g of margarine and the remaining water gradually, mixing until the dough is slightly firm and manageable.
Knead the dough for about 10 minutes until smooth and elastic.
Let the dough rest for about 40 minutes until it has doubled in size.
Divide the dough into pieces weighing approximately 50 g each, aiming for about 17-18 pieces.
Shape each piece into a small bun and place them close together on a baking sheet.
Cover the buns and let them rest for about 10 minutes to relax the dough.
Prepare an egg wash with 1 egg and a splash of vanilla extract, and optionally a tablespoon of milk.
Preheat the oven to 180°C (356°F).
After the buns have rested, brush them with the egg wash.
Bake in the preheated oven for about 20 minutes until golden brown.
