500 grams kakrol (teasel gourd)
2 tablespoons mustard oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
Salt to taste
2 green chilies, chopped
1/2 cup water
Fresh coriander leaves for garnish

Wash the kakrol thoroughly and cut them into thin slices.

Heat mustard oil in a pan over medium heat until it starts to smoke slightly.

Add cumin seeds to the hot oil and let them splutter for a few seconds.

Add the sliced kakrol to the pan and stir well to coat with the oil.

Sprinkle turmeric powder, red chili powder, coriander powder, and salt over the kakrol.

Add chopped green chilies and mix everything well.

Pour in 1/2 cup of water and cover the pan with a lid.

Let it cook on low heat for about 15-20 minutes, stirring occasionally, until the kakrol is tender.

Once cooked, remove the lid and increase the heat to evaporate any excess water, if necessary.

Garnish with fresh coriander leaves before serving.
