Kankarol (kakrol) - 2 cups
Potato (alu) - 1 cup
Chopped onions and green chillies - 1/4 cup
Ginger and garlic paste - 1 tsp
Turmeric powder - a little less than 1/2 tsp
Chili powder - a little more than 1/2 tsp
Salt - to taste
Soybean oil - 2 tbsp
Chopped coriander leaves - as needed

Wash and cut the kankarol (kakrol) into pieces.

Peel and cut the potato into cubes.

Heat soybean oil in a pan.

Add chopped onions and green chillies, and sauté until onions are translucent.

Add ginger and garlic paste, and sauté for a minute.

Add the kankarol and potato to the pan, and mix well.

Sprinkle turmeric powder, chili powder, and salt, and mix again.

Cover and cook until the vegetables are tender, stirring occasionally.

Garnish with chopped coriander leaves before serving.
