Originating from Colombia, Panke de Plátano is a beloved dessert that showcases the versatility of plantains, often enjoyed during family gatherings and celebrations. This dish highlights the sweet and rich flavors of ripe plantains, making it a comforting treat. Today, variations can be found across Latin America, with each region adding its unique twist to the recipe.
Preheat the oven to 350°F (180°C).
Measure 1/2 cup of brown sugar and level it off.
Measure 2 cups of all-purpose flour, leveling it off as well.
Use 3 small eggs instead of 1 large egg, as the creator has smaller eggs.
Wash the eggs before using them.
Mash 3 large ripe bananas in a bowl.
Combine the mashed bananas with the brown sugar and mix for about 2 minutes.
Add 1 tablespoon of vanilla extract and mix well.
Add a pinch of salt and mix again.
Crack the 3 small eggs into the mixture and mix for about 1-2 minutes until well combined.
Add 1/2 cup of unsalted butter (113 g) and mix well. If using salted butter, omit the pinch of salt.
Add the 2 cups of flour and 1 tablespoon of baking powder to the mixture and mix until just combined, about 2 minutes or less.
If desired, add chocolate chips or other toppings and mix gently.
Pour the batter into a 5x10 inch baking mold, smoothing the top.
Add additional chocolate chips on top for decoration if desired.
Bake in the preheated oven for 45 minutes, placing the mold in the middle rack.
Check for doneness at 35 minutes using a toothpick; if not done, continue baking.
After 45 minutes, turn off the oven and leave the bread inside for an additional 10 minutes.
Remove the bread from the oven and let it cool slightly before cutting to avoid it becoming dense.
