Classic Caesar Salad

The Caesar Salad originated in Tijuana, Mexico, in the 1920s, attributed to Italian immigrant Caesar Cardini. It quickly became a staple in American cuisine, celebrated for its rich flavors and creamy dressing. Today, variations abound globally, with many adding grilled chicken or shrimp, but the classic version remains a beloved favorite.

Cut the crust off the bread and slice it into croutons.
Place the croutons on a baking pan and bake in a 350°F oven for about 50 minutes until nice and crispy.
Cut the big leaves of romaine lettuce into slices.
Wash the lettuce after cutting to keep it fresh.
Cover the washed lettuce with a wet paper towel and refrigerate until ready to use.
In a bowl, combine egg yolks, mustard, garlic, anchovies, vinegar, and olive oil to make the dressing.
Add a little salt to the dressing mixture.
In a large bowl, add the croutons and just enough dressing to coat them without soaking them.
Add additional olive oil and vinegar to taste.
Toss the salad gently to coat the lettuce with the dressing.
Add grated cheese to the salad after tossing to prevent lumps.
Taste the salad and adjust seasoning if necessary.
Serve immediately, garnished with extra grated cheese if desired.
