Zucchini Lasagna Recipe

Slice the zucchini into quarter-inch thick pieces.

Preheat the barbecue to 550 degrees Fahrenheit and ensure it's clean.

Place the zucchini slices on the barbecue and cook until they have a nice color on one side, about 5 minutes.

Turn the zucchini slices over and cook for another 5 minutes until dry and cooked.

Spread a layer of meat sauce on the bottom of a baking dish.

Layer zucchini slices over the meat sauce.

Spread more meat sauce over the zucchini slices.

Add a layer of mozzarella cheese on top of the sauce.

Sprinkle pecorino cheese over the mozzarella layer.

Repeat the layering process with another layer of zucchini, meat sauce, mozzarella, and pecorino cheese.

Preheat the oven to 400 degrees Fahrenheit.

Cover the lasagna with foil and bake for 20 minutes.

Remove the foil and add more mozzarella and pecorino cheese on top.

Return to the oven for an additional 5 minutes until cheese is melted and bubbly.

Let the lasagna cool for a bit before serving.
